All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities.OBSERVED 1 LIGHT SHIELD MISSING IN REAR WALK-IN COOLER INSTRUCTED TO REPLACE. ALSO CLEAN LIGHT SHIELD COVER IN REAR KITCHEN PREP. The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.OBSREVED THE FLOOR DRAIN IN REAR AREA NOT CLEAN IN FRONT THE WALK-IN COOLER AND FREEZER, INSTRUCTED TO CLEAN.

CERTIFIED FOOD MANAGER STATED, 'FOOD WAS COOKED YESTERDAY. NO TEMPERATURE LOGS. INSTRUCTED COLD POTENTIALLLY HAZARDOUS FOODS MUST BE AT 40F OR BELOW. FOODS DISCARDED. V=100. CRITICAL CITATION ISSUED, 7-38-005(A). OBSERVED KITCHEN EXPOSED SINK NOT ACCESSIBLE FOR PROPER HAND WASHING. FOUND TEN PIECES OF MULTI-USE UTENSILS, PARTS OF POTATOES PEELER INSIDE ABOVE SINK. INSTRUCTED SINK MUST BE ACCESSIBLE FOR PROPER HAND WASHING AT ALL TIMES. CRITICAL CITATION ISSUED, 7-38-030. INSTRUCTED TO PROVIDE SPLASH GUARDS BETWEEN EXPOSED SINK, MOP SINK AND 3PART SINK. THE FOLLOWING IN NEED OF CLEANING; MUST CLEAN/SANITZE; COOLERS, FREEZERS, COOKING EQUIPMENT, BOTTOM PANELS OF PREP TABLES, AND STORAGE SHELVES. MUST REMOVE FOIL COVERING FROM EQUIPMENT. INSTRUCTED TO LABEL PREP FOODS INSIDE WALK IN COOLER. MUST CLEAN FILTER ABOVE COOKING EQUIPMENT. OBSERVED BOTH 3PART SINKS FAUCETS AT PREP AREAS IN POOR REPAIR, MUST REPAIR OR REPLACE. INSTRUCTED TO REMOVE UNNECESSARY ARTICLES THRU-OUT STORAGE AREAS, CLEAN AND ORGANIZE TO PREVENT PEST HARBORAGE. ARTICLES MUST BE STORED OFF FLOORS, AWAY FROM WALLS.
