OBSERVED 2 DOOR REACH-IN PREP COOLER WITH AN AIR TEMPERATURE OF 53F INSIDE OF THE COOLER. UNIT WAS USED TO STORE POTENTIALLY HAZARDOUS FOODS. UNIT TAGGED BY CDPH. MUST MAINTAIN THE UNIT BELOW 40F. CRITICAL VIOLATION 7-38-005A.
All cold food shall be stored at a temperature of 40F or less. OBSERVED POTENTIALLY HAZARDOUS FOODS STORED IN THE 2 DOOR PREP COOLER AT IMPROPER TEMPERATURES. FOUND VEGGIE BURGERS AT 49F, EGGS AT 50F, VARIOUS TYPES OF CHEESES BETWEEN 49-52F, HEAVY CREAM AT 48F. MANAGEMENT VOLUNTARILY DISCARDED APPROX. 5# OF FOOD WORTH $50. CRITICAL VIOLATION 7-38-005A.
All food should be properly protected from contamination during storage, preparation, display, service, and transportation. FOOD (ICE) NOT PROTECTED FROM CONTAMINATION INSIDE OF THE ICE MACHINE. MUST HAVE MACHINE REPAIRED SO THAT A SANITIZING RINSE OF 100PPM CHLORINE IS ACHIEVED. UNIT TAGGED HELD FOR INSPECTION. MANAGER INSTRUCTED TO USE 3 COMPARTMENT SINK TO WASH RINSE AND SANITIZE DISHES UNTIL MACHINE IS REPAIRED. FAX REINSPECTION LETTER TO (312) 746-4240. CRITICAL VIOLATION 7-38-030.
Smoking shall be prohibited in all public places except in designated smoking areas. OBSERVED ASHTRAYS STORED INSIDE OF THE HOSTESS STATION OUTSIDE OF THE RESTAURANT NEAR THE PATIO. MANAGER DISCARDED THE ASHTRAYS AT MY REQUEST. MANAGER INSTRUCTED THAT NO SMOKING IS ALLOWED ON THE OUTSIDE PATIO. VIOLATION OF CLEAN AIR ORDINANCE 7-32-020.

FLOORS AROUND HEAVY EQUIPMENT, UNDER SINKS & DISHMACHINE, & ALONG WALLBASES AROUND THE WALK-IN COOLER MUST BE FREE OF FOOD DEBRIS, DIRT OR CLUTTER. THE METAL PLATE FLOORING IN WALK-IN COOLER IS POPPING OUT, MUST FIX & MAKE SMOOTH/EASILY CLEANABLE. ALL STOCK IN WALK-IN COOLER MUST BE ELEVATED OFF THE FLOOR.
WALLS ABOVE PREP AREA HANDSINK, BELOW THE DISHMACHINE & 3-COMP SINK MUST BE KEPT CLEAN & FREE OF FOOD STAINS/DIRT. THE CEMENT PILLARS IN PREP AREA MUST BE SEALED & MADE SMOOTH/EASILY CLEANABLE.
FOLLOWING NEED CLEANING/SANITIZING: INTERIOR FLOORS & GASKETS OF SMALL COOLERS IN KITCHEN, INTERIOR OF 3-COMP SINK IN KITCHEN, MEAT SLICER.
THE PIPE UNDER THE BAR HANDSINK IS LEAKING, MUST FIX.
