Instructed to detail clean floors in prep and bar along wallbase and reseal floor in bar area to have smooth and non arborsant surface. Ceiling and walls not maintained in prep area. Instructed to replace all worn/damaged ceiling tile and repair reseal stainless steel panel around exposed handsink wall. Light covers not cleaned in prep area. Instructed to detail clean all covers. Light bulbs not shielded in prep area. Instructed to sheild bulbs and install end caps on bulbs. Multi use utensils not properly stored. Instructed to invert all cleaned utensils to prevent contamination before use. Cutting baords attached to prep table not maintained. Instructed to replace all worn cutting boards. Ice bins not provided with covers. Instructed that ice must be protected during storage and use to prevent contamination. Exterior cooking equipment, soda sprayer holders, sinks, prep tables, coolers, storage shelves and exhaust hood not cleaned. Instructed to detail clean and sanitize daily.
