  • VIOLATION OF SECTION 3-501.16 *CRITICAL* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: The shake machine is holding the ice cream mix in the top of the machine at 44-45F. REQUIRED CORRECTION: CORRECT IMMEDIATELY.  Potentially hazardous foods shall be maintained at 140°F (60°C) or above (except roast beef may be held at 130°F (54°C) or above) or at 41°F (5°C) or less.
  • VIOLATION OF SECTION 5-202.14 Backflow prevention devices do not meet ASSE design standards, specifically: There is a splitter attached to the faucet at the mop sink, with one side going to a chemical dispenser and the other to a hose with a sprayer, and the water is left on. This forces the backflow device to stay open, so it will not work to protect your fresh water from contamination if water pressure reverses. REQUIRED CORRECTION: A backflow or backsiphonage prevention device installed on the water supply system shall meet American Society of Sanitary Engineering standards.
