- TCS foods were not properly thawed. Observed packaged meat in prepared foods area thawing in bowl of water.
TCS food shall be thawed as required in this rule. TCS foods are required to be thawed under either refrigeration, cold running water (41F or below), through microwave cooking. Operator corrected during inspection as meat was still less than 41F
- Critical: Equipment food-contact surfaces or utensils are dirty. Observed excessive build up in cappucino machine in dining area.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. Clean cappucino machine frequently and thoroughly to prevent contamination of food.
- The physical facilities are not being maintained in good repair. Observed missing cove basing near door of walk in cooler containing only chicken in prepared foods area near sushi and rotisserie chicken.
The physical facilities shall be maintained in good repair.

- Floors, walls, and/or ceilings were not smooth and easily cleanable. Re-grout floor at produce storage area where necessary to provide a smooth easily cleanable surface. A call to repair company has been made at this time.

- Equipment and/or components are not maintained in good working order. Repair/replace foot pedals at both handsinks at meat/seafood department to ensure hot water (and proper handwashing).
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
- Observed a build-up of dirt and debris. Clean floor around oil bin/container (back storage area) and at kitchen underneath fryers to remove grease.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
