    Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency -replace home type freezers with commercial nsf approved equipment at the time of replacement.
  • Cooking equipment or pan surfaces are dirty observed build up and grease build up on oven, stove top, grill, back splash of cook line.
    To prevent contamination, the food-contact surfaces of cooking equipment and pans shall be kept clean.

    To prevent contamination, the food-contact surfaces of cooking equipment and pans shall be kept clean.
  • Observed a build-up of dirt and debris the floors in the kitchen area, deli area etc. .
    The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
  • Observed maintenance tools improperly stored which resulted in contamination.
    Maintenance tools shall be stored so they do not contaminate food, equipment, utensils, linens, single-service articles, or single-use articles, and in an orderly manner that facilitates cleaning the area used for storing the maintenance tools.
  • Observed unnecessary or nonfunctional items and /or litter on the premises throughout the deli area, kitchen area and back area.
    The premises shall be free of Items that are unnecessary to the operation or maintenance of the FSO or RFE such as equipment that is nonfunctional or no longer used and litter.
