To prevent foodborn illness, after use as a medium for cooling the exterior surfaces of food such as melons or fish, packaged foods such as canned beverages, or cooling coils and tubes of equipment, ice may not be used as food. Provide a shield to protect beverage ice from beverage lines.
- Critical: Utensils and food-contact surfaces of equipment were not sanitized at the required frequency.Mold was noted on the interior of the bulk ice machine in the basement.
To prevent pathogen growth, utensils and food-contact surfaces of equipment shall be sanitized before use and after cleaning. Clean and sanitize this unit to prevent food contamination. Correct By: 28-Oct-2014
- Floors, walls, and/or ceilings were not smooth and easily cleanable. Holes were noted in men's room walls and ceiling.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. Repair/replace these surfaces to deter pests and provide cleanable surfaces.
