SPECIALIZED PROCESSES ARE NOT TO BE CONDUCTED AT THE RETAIL LEVEL UNLESS A HACCP PLAN EXISTS, HAS BEEN APPROVED, AND A VARIANCE HAS BEEN GRANTED BY DC DOH. APPROVAL LETTER MUST BE KEPT ON SITE.
