  • Proper cooking time and temperature
    Chicken was being partially cooked and cooled and then re-cooked the rest of the way when ordered. Partial cooking is not permitted. The chicken must be either cooked all the way to 165 degrees and then cooled from 135 degrees to 70 degrees within two hours and then from 70 degrees to 45 degrees in an additional 4 hours and then re-heated to 165 degrees per order, or the chicken needs to be fully cooked from the raw state and served per order.

    Employee was washing single use containers for re-use. Single use container may only be used one time and then discarded. They may not be washed and re-used.

    General comment - The baseboard in the dry storage room and in one of the women's restrooms is coming loose from the wall and needs to be repaired.

    Cleaning is needed in the following areas: on the catch pans under the wok, under the small stove, on the table that the small stove sits on, under the microwaves, on all table bottoms, on the outsides of the equipment, on all three of the chef's carts, on some of the refrigerator handles and on the shelves above the prep sinks and the 3 compartment sink.

    General Comment - Some minor floor cleaning is needed under the refrigerator and freezer across from the water heater.

    The caulking has come out around the hood and will need to be re-caulked. / The gasket on the small reach-in refrigerator at the servers station is broken and will need to be replaced. / The left faucet on the 3 compartment sink leaks when the water is turned on and will need repair. / There is a crack along the edge of the scrap sink at the dish machine that will need repair.

    General Comment - Some minor cleaning is needed on the wall beside the woks.

    The three shelves in the single door refrigerator in front of the water heater are rusty and will need to be replaced. / The caulking has come out around the hood and will need to be re-caulked. / There is a leak at the cold water handle of the back prep sink that needs to be repaired. / The gasket on the small reach-in refrigerator at the servers station is broken and will need to be replaced. / The table on the left as you enter the kitchen has three holes in it. This will have to either be repaired or the table replaced.

    In the walk-in cooler, there were 2 containers of sauce stored below raw meats and the raw eggs were stored above pre-cooked and ready to eat items. All pre-cooked and ready to eat items must be stored above or away from raw meats.

    The three door freezer is leaking at the bottom when the unit goes into defrost mode, have this repaired right away. / There is a broken gasket on the reach-in refrigerator at the servers area. / There are two tables with holes in them that will need to be either repaired or replaced.
