GC The two tornados in hot holding roller were 120-130 F. When hot holding potentially hazardous food, maintain temperature at 135 F or above. Product discarded by manager.

Sanitizer was not available and 3 comp. sink is not clean. Sanitizer must be available and maintained at a strength of 50 ppm when chlorine sanitizer is used. Chlorine bleach used for sanitizing must be unscented. Soda machine nozzles needed additional cleaning. The ice bin on top of the ice machine must be drained, cleaned and sanitized by the manufacturers specifications. Call Tony Williams at 703-3161 when these items are corrected. Correct within 10 days.

Test strips must be provided for checking sanitizer strength.
- Thermometers provided and accurate
Thermometer for checking food temperatures was not available. A metal stem-type thermometer accurate to 2F (1 C) shall be available to check food temperatures. A thermometer measuring 0 220 F is needed to check both cold and hot holding food temperatures. Use thermometer on a regular basis to ensure proper food temperatures.
- Toilet and lavatory facilities; supplied, properly constructed, clean, good repair, signs provided
Towels were not available at back hand wash sink. Corrected during inspection. Toilets and lavatories must be properly cleaned. Lavatories must be properly caulked to the wall. The base of the toilets must be caulked with a cleanable caulk. Repair leak at toilet in mens bathroom.

Do not store hot dog tongs under the roller grill. The tongs must be stored so that they do not become contaminated.

Floors must be cleaned around corners and behind equipment. Ceiling tiles must be in good repair. The ceiling tiles must be of a smooth, washable type. Walls must be clean and free from holes.

Items must be stored 12"" off the floor on stationary shelving and 6"" off the floor on mobile shelving to facilitate proper floor cleaning.

Replace the shelving that is in bad repair inside the reach in cooler. The drink machine drain is leaking and must be repaired.

No sanitizer was provided inside the spray bottles today. An approved sanitizing solution must be provided for sanitizing of food contact surfaces. REPEAT VIOLATION. There was some question as to the proper sanitizing procedure at the 3 compartment sink. The sink must be clean and items must be washed, rinsed, and sanitized.
