    A small fly problem was noted in dish washing area. Need to improve pest management

    Any rusty shelves need to be replaced ex. shelves in dish room under prep table. The wire shelves in the refrigerator and freezer are starting to chip and rust and need to be replaced. Heavy condensation was noted in the freezer and needs to be corrected.

    Detailed cleaning is needed on all equipment ex. shelves of grill, under steam table
  • No cross-connections
    GC- A back flow preventer, for pressure, needs to be installed at can wash, or hose can be disconnected when not in use.

    GC- All thermometers must be accurate
  • Proper hot holding temperatures
    GC-At the time of inspection the pork tenderloin was 130-150 degrees at the steam table. The dial was accidentally turned down. Corrected. Final cook temps of tenderloin were 175-165 degrees. Advised cook to check temps of all tenderloin to maintain hot hold at 135 degrees
  • Minimal bare hand contact with foods
    GC-Need to review all procedures to reduce bare hand contact. This will minimize the potential for cross contamination.

    General cleaning is needed under equipment. All damaged ceiling tile needs to be repaired or replaced.
  • Hands clean and properly washed
    It was noted during the inspection an employee was breading pork tenderloin and without washing her hands would use a utensil to flip the tenderloin in the skillet. The employee would wash her hands if the batted was starting to stick but would go right back to using the same utensil to cook with. Need to improve this procedure to possible contamination.
  • Food contact surfaces cleaned & sanitized; approved methods and sanitizers
    The ice machine needs to have very detailed cleaning inside the ice bin and the filters. It was noted mold was growing inside. The tea nozzles and slicer were also noted to need detailed cleaning. Kitchen staff should always have sanitizer available. Upon arrival it was noted there was not sanitizer in the 3rd compartment of the sink used to wash, rinse, and sanitize dishes

    General Comment. The can opener and base needed cleaning.Sanitizer in the utensil sink measures around 200-300ppm Quat. Be sure to check the sanitizer after it has cooled to ensure a more accurate reading on the test strips. The sink was originally set-up for hot water sanitizing, when using chemical sanitizing be sure to allow more time for the utensils to air dry.

    General Equipment cleaning is needed.
  • Single-use/single-service articles properly stored, handled, used
    Need to keep the single service cups either in a dispenser, or keep them in the wrapper until they are individually dispensed. There are 4 stacks of uncovered cups by the soda dispenser.

    Repeat. Floors need cleaning beneath equipment. Ceiling tiles have been replaced over the hood and in the dining room.
