A vast quantity of pans, dressing cups, and plastic and metal pans are stacked tightly, wet. Air dry items completely before stacking.

Chili cooling in sink 2.5 hours 87-105F. Cool food from 135-70F within two hours, and then from 70-45F in the next four hours. Food reheated to 165F and cooling begun again.
- Non-food contact surfaces clean
Clean gaskets of refrigerators and crevices of equipment of food buildup.
- Toxic substances properly identified, stored, used
Degreaser stored in unlabeled spray bottle and spray bottle labeled ""sanitizer"" in chemical storage room. Label all chemicals properly to denote contents.
- Garbage properly handled & disposed; containers properly maintained
Dumpster is leaking and its lids are broken, have it repaired or replaced.
- Floors, walls, ceilings properly constructed, clean, in good repair
Floors, walls and ceilings must be in good repair. The cement flooring needs to be re-finished to cover damage. All pipe penetrations must be properly sealed. The wooden wall base in the chemical storage area is in poor repair and must be replaced. Also, the floor in this area is in poor repair and must be re-surfaced. All of the sewer clean outs in the chemical storage area must have escutcheon plates.
- In-use utensils properly stored
Ice scoops stored with handle in contact with ice in bar. Store handles out of ice to prevent contamination.
- Meets illumination requirements; shielded; lighting & ventilation clean & in good repair
Lighting at bar ice bin is 25 foot candles. Increase lighting to meet minimum requirement of 50 fc.
- Toilet and lavatory facilities; supplied, properly constructed, clean, good repair, signs provided
No hot water available in restrooms. Several automatic paper towel dispensers were jammed. Provide paper towels at each hand sink in case dispensers jam.
- Proper cooling methods used
One container chili cooling in prep sink with no water in ice bath. It did have an ice wand but was not being stirred. To cool large quantities of foods, it must be stirred frequently to disperse the heat quickly, and have the temperature monitored as it is cooling. Additionally, the ice must come to the top level of the food, and water must be added to ice to help dissipate heat.
- Proper cold holding temperatures
Potentially hazardous foods in top of right side prep refrigerator across from cook line are 40-56F, and butter in the tall glass door salad refrigerator is 56F. Food temperatures in large walk in cooler are 46.5-47.3F. Maintain temperature of cold potentially hazardous foods at 45F or less. Foods placed into walk in refrigerator to cool quickly. These units' temperatures may need to be turned down or the units serviced to ensure all foods maintain proper temperature.
- Food protected during storage, handling, display, service & transportation; written notice for clean plates
Raw pork stored above raw solid beef in meat cooler. Store food by final cook temperature with raw beef above raw pork.General comment: raw chicken stored in freezer over ready to eat foods. Store raw chicken below these foods.Mixers stored in dump sink at bar, adjacent to a hand sink with no splash guard. Store these items protected from contamination, and do not store food or drinks in dump sinks.
- Thermometers provided and accurate
Replace broken air temperature thermometer in prep refrigerator on cook line.
- Food contact surfaces cleaned & sanitized; approved methods and sanitizers
Sanitizer in red buckets tested 0 ppm chlorine. Maintain sanitizer at 50-100 ppm at all times.Spoons and two vegetable slicers had food residual on food contact surfaces. Thoroughly clean and sanitize these surfaces.
