    GC- Ensure all chemicals are properly Identified & stored.
  • Garbage properly handled & disposed; containers properly maintained
    GC- Ensure dumpster has plug to prevent drainage onto pad. Dumpster plug is missing.
  • Proper hot holding temperatures
    GC- Ensure proper hot holding temp of 135 degrees for foods that need to be kept warm. Potatoes & grits noted at 90 & 116 degrees.
  • Linens, cloths & aprons properly used & stored
    GC- Ensure proper storage of aprons & lines, Aprons noted stored on two different shelves improperly.
  • Food contact surfaces cleaned & sanitized; approved methods and sanitizers
    No bottle sanitizer properly mixed, Ice machine dirty. Properly mix bottle sanitizer and have on hand for use, properly clean & sanitize Ice machine.
  • Utensils & equipment properly stored, air-dried, handled
    Pans noted stored on milk crates under vegetable prep sink, ensure pans are upside down to prevent food debris or contamination.
  • Food protected during storage, handling, display, service & transportation; written notice for clean plates
    Potatoes stored on floor under meat prep sink. Vegetables stored on meat prep sink. Ensure all foods are not stored on the floor & vegetables are not stored or prepared on meat sink.
