  • Critical. Potentially hazardous food not held at 135 degrees Fahrenheit or above. Chicken fries. Manager stated they cook/fry chicken fries for 2 minutes at 350 degrees. Then placed on counter in PHU pan an employee pushes button to time chicken fries for 30 minutes an when beeper goes off frys are discarded after the 30 minutes are up. I called this into Kenny Hensdill Dist 6 Manager for DBPR H R. He said to write it up and he will research to see if ok. see comments.
