Sushi fish received frozen shall had a statement on the invoice from the supplier that the fish is frozen for parasite destruction. All fish served raw that is required to be frozen for parasite destruction shall be purchased from a supplier that freezes the product until a written procedure is provided to and approved by Consumer Health.
