All South American countries and Mexico are fairly diverse and complete except the small ones (Paraguay, Uruguay, Suriname, Guyana). All of them have many indigenous languages, ethnicities, immigrant groups, climates and so on.
You're concentrating solely on the ethnic variable and omitting the geographical and climatic variables completely.
What identifies Latin America from the rest of the world? One of the pillars is the Native American civilizations, no immigrant populace can make up for that.
Also although Brazil has the greatest immigrant ethnic variety, other LatAm countries are not void of this.
No not really, I'm concentrating on the ethnic variety as a whole. Latin America is not an indigenous vs Iberian component only, but a real melting pot of cultures.
If you want to vote Colombia as your first, I respect that but obviously there are more shades of gray regarding South America and its components.
Curitiba is in fact a first world city (economic, socially and in organization) just it becomes Curitiba very different from others Brazilians cities you mentioned… and so European because like medium cities of 1 million people like Joinville or Blumenau or Caxias do sul or Nova Hamburgo; Curitiba was a colony of Germans, Russian from Volga (Germans), Polish and Italians but Curitiba is a capital city of 3,5 millions of inhabitants in his metro area.
Curitiba is also the coldest capital city in Brazil with many winters days temperatures around 0 degrees.
Manaus is the Brazilian big city where most people have native American background, although people in Manus is mixed race 50% Amerindian and 50% white in average, so they are not much Amerindian culturally but yet with strong influence specially because Manaus localization is in the heart of Amazon jungle with 2,5 millions of people in metro area they are a big city with a taste of Amazon in the food, customs, weather... Other world… Wonderful!!
Is an industrial city, Manaus is a free taxes Brazilian city for soft industries of mobile phones, computers… this kind of stuffs. Manaus is safe and very developed comparing with most north and northeast cities.
Salvador (Bahia) is more or less like the ‘’Brazilian’s New Orleans’’ a hub of African-Brazilian culture.
In Salvador 80% of his inhabitants are blacks or mixed race of whites-blacks but mostly blacks in the admixture but not just because this, they kept much of the food, customs, music of African influence.
Salvador is tropical beach city totally touristic.
Rio de Janeiro is more or less like a Portuguese city but with many aspects similar to Salvador.
In fact Rio was capital of Portuguese empire. 50% of the Rios’s inhabitants are whites but of Portuguese background it aspect became them in many ways different from paulistas and southern and the other 50% are blacks or mixed whites-blacks and the city has important African influence in music and culture. Rio is a tropical touristic beach city like Salvador but with economy more diverse and 10 million people in metro area.
So they are like cities from 3 continents in the same country.

No-one is saying Latin America is just an indigenous vs Iberian component. I actually find it odd that you omitted the African component in that statement, one of the founding cultures.
You still continue to focus on the ethnic variable only. As I said other LatAm countries are not void of immigration outside LatAm. Peru has a large east Asian influence and Colombia a large Middle Eastern influence. However, Brazil lacks one of the pillars of LatAm's founding cultures.
In any case this is just one variable - the only one you seem to focus on.

Ecuador is stunningly diverse for such a small country
Ecuador is very diverse geographically and has a good number of distinct cities, in a way it's a continuation of Colombia. It lacks a little in the conviction of its culture though, tends to neglect it in favour of other imported cultures.
Arguably the most diverse city in Colombia is Cali. A blend of Cuban, Pacific, Andean even some Asian influences, now that it's getting safer year on year its beginning to shine.

Guyana and Suriname have quite diverse populations, especially Suriname.
