I heard something strange recently, that Im not sure if its something Christians truly believe, or may have believed at one time.
'Dinosaurs did not really exist, the bones and fossil remnants were put here by God to test us'
Has anyone else ever heard this theory? Not sure what this theory is based on though.
I wouldn't call it a "theory". Sometimes it's presented as Satan having put the bones there to throw off people from believing the Bible is literal. Yes, it is a common belief among fundamentalist Christians, but not other types of Christians.
I find it hard to believe that you have not heard of this before. It's is pretty widespread knowledge that many Creationists use this story to explain away the existence of million+ year-old dinosaur bones when they claim that based on Genesis, the world is only 6000 years old. When you have accepted that as true, you need a story to cover what doesn't jibe with reality.
When my daughter started dating Son of a Preacher Man in high school and going to his father's church, I was a bit concerned because I knew they were fundamentalists, and then she came home one day and told me that a friend of hers had warned her about this belief about dinosaurs when she start dating the boyfriend. She thought he was upset that she was dating that guy instead of him and maybe making up stories, but she came home and told me, 'OMG, Mom, they really do say this!"
She was having fun with her boyfriend and with the church band and youth group, so I told her just to be careful and use her intelligence to ask if things made sense if she heard things in this church that didn't ring true. She did, and managed to date the guy and attend that church throughout high school without going off the deep end into fundamentalism herself.

There are Christians who believe that. I don't know how common a belief it is though. Those who do believe it would be among the young earth creationists, though not all young earth creationists hold such a view. Perhaps most of the young earth creationists believe that there were dinosaurs on the ark. There is no geological evidence for a global flood however, and much evidence against it.
Anyone who does believe that dinosaurs didn't exist isn't thinking clearly and has little regard for scientific evidence. I do seem to remember that someone on this forum years ago did believe that dinosaurs didn't exist.

It does seem extremely bizarre when you really think about it....a long time ago, HUGE, weird looking beasts existed, that look nothing like animals today?!!!! LOL
