Yes everything God does is good, even creating evil. But I'm talking about ultimate good, not temporary good. This whole planet earth is somewhat (almost completely?) bad - but that is temporary and for our ultimate good. God does things for our (mankind's) ultimate good. That is His love. That is what brings Him glory. The fact that He is selfless and does things for the ultimate benefit of all.
Eternal torture is not good (ultimately) for mankind and is completely contradictory to His nature.

Rape and murder of innocent little girls is very very evil. But God allows evil, even creates evil, for a good reason. That good reason is for the ultimate good of all mankind. Make no mistake: God allows evil for the good of all mankind. Can you understand why this would be? We discussed it in another thread somewhere.
But there is no good reason why God could cause or even allow eternal torture.

But say some people did reject God forever. Why is it better for God to eternally torture them, instead of simply annihilating them out of existence?

The bible is pretty clear about individuals using torture to extract confession but not so clear about the government's use of it. As far as eternal "torture" God alone is able to mete out punishment with perfect justice, and it is His prerogative to make His punishment painful. Demons are aware of a future time of “torture†for themselves. During the Tribulation, torment will be part of the plagues upon evildoers. In any of His judgments. God is holy and perfectly fair.
