As soon as you say ground beef you are out of the southwestern or Texas chili realm. Cincinnati chili is made from ground beef, not browned, and cooked with the requisite spices for several hours over low heat.I use a crockpot for mine. Why do you think the Cincy Chili parlors have been so successful - the product lasts on the steam tables forever.

But when it comes to Texas or Southwest Chili, I want mine to be chunky. My preference is a round steak, partially frozen, which I can slice up into 1/4" to 3/8" cubes. Brown them slightly then toss into the crockpot. After some time begin to toss in the rest of the ingredients. After a whole day of simmering I am in heaven.

As for the serving, these are my substitutes.
  • Macaroni instead of spaghetti.
  • Thin grated sharp cheddar instead of mild.
  • Chunky red onion slices instead of small white diced.
This is my version of Cincinnati Chili served Southwest style. Is it any better?, no just different!

One of my high school acquaintances -- a Pennsylvania native -- now living in C-bus recently "discovered" Skyline. He e-mails me every times he's tried something new off the menu. Cracks me up ... but hey! Another convert!

As a former Gold Star ADDICT (4+ times a week--they were the first chain to accept debit cards and brew their own iced tea), I lost the taste for cincy chili and stopped eating it for a year. Then I had Skyline for lunch a few months ago. All I can say is the portions are better, the noodles are firmer and I like Skyline better. Never thought I would.

One thing though, GS Chili is a little healthier, less fat, less cholesterol, and more protein.

I was introduced to Skyline Chili @ the Ludlow location, at the tender age of 5 or 6 yrs old. We used to go to Sunday mass at the Church of the Annunciationn and walk up to Skyline for a couple coney's and a coke. Sometimes my Mom would treat us to the a great burger and onion rings at the Hitching Post,then over to Graters or UDF for a ice cream cone. Man oh man....sound like my parents when I say...those were some simpler times back then....
