Santa Fe is one of my favorites being the creative capital that it is and all its artistry being sort of a microcosm for New Mexican culture and history.
I also like Olympia, WA as it's close enough to the Puget Sound area metro but in its own element and far enough away from Seattle so that the bigger city doesn't dominate the political scene entirely in Washington State. It's also an eclectic little city with a nice downtown and waterfront, just a nice little state capital that's not isolated but not in the rat race either. Perfect in a way.
As far as state capitals go I can't rate cities like Denver, Boston, Phoenix, or Atlanta highly because they have so much noteriety themseleves as it is that their recognition as state capitals almost seems to be an afterthought.
