for someone that likes icecream, cakes, and poptarts- what would be a healthier alternative to snack on?
Hoodwinked, now is a good time to buy peas in the pods at some of the local markets and they're a good thing to snack on, or radishes, the new carrots are so sweet and crunchy, celery sticks, apples chunks with a piece of cheddar .. the harder the cheese, the better it is for you.

Also like to suggest you visit a health food store for snacks such as soy nuts, or if you want some 'crunchy' type snacks, at least there they are a little healthier than the normal stores .. the oils are better and a better selection of baked instead of fried.
The breads are healthier, cereals, all sorts of stuff (also more expensive .. but hey! .. you're worth it!)
One more suggestion .. how are you with chop sticks?!? A smaller plate really helps, makes you have smaller portions and if you eat with chop sticks, it takes much longer .. and waaaaay more fun!! Don't worry, you'll get the hang of it!
The longer it takes to eat your meals, the fuller you will feel. Because if you eat fast, you can absorb more food before you have a chance to feel full.
Icecream - SF fudgecicle, Low Fat Ice cream, Edys double churn
Make your portions just a scoop & limit the time you eat this type of stuff.
I like to make it my after dinner treat or midnight snack. i was more about being realistic than perfect at first. Made it a lot less stressful and easier to stick to.
Cakes - You can bake with apple sauce instead of oil. Certain cakes are lower in fat and cals. Also use the icecream rule. Its either icecream or cake. But not both. And only as a treat once a day max. Add a stir in fiber to make it more filling.
PopTarts - Have a toaster oven? This is way better:
A really good whole grain bread where you can see seeds and stuff in it.
toast it just enough to dry it (light)
Take a TSP of SF low fat vanilla yogurt and spread evenly on top
Cover with a pinch of your favorite nuts (i like almond slivers or crushed walnuts)
Sprinkle with cinnamon
Toast until yogurt melts to a glaze.
Its a nice good for you sweet tasting snack. You still have to watch your calorie intake of course but those are some of my suggestions that taste good to me.

I also wanted to mention frozen yogurt. I haven't tried many of the grocery store kinds but I used to work at a frozen yogurt "parlor" and many of the offerings taste ALMOST JUST like ice cream. I favored the fat free vanilla with blackberries when I worked there. (I'm a blackberry addict)
I don't think you'll be able to give up foods you love, you just need to learn how to tweak them a bit.
Instead of fried chicken, try roasted or baked chicken breast.
Instead of fried fish, try baked flounder or salmon.
Instead of Oscar Meyer weiners, try Healthy Choice turkey franks.
Instead of white bread, try 100% whole wheat bread.
Instead of pan frying steak, try grilling it, and make sure it's a lean cut of meat.
The list goes on and on. When I cook with ground beef I also rinse the meat under hot water. I read somewhere that reduces the fat by 70%.

Its also pretty easy to buy low fat ground beef to begin with (I usually get the 93/7 meat), and then drain the excess fat at the end. There is never really much at all. I've actually started moving away from ground beef, and using ground turkey in chili (primary place I cook with ground meat). I honestly can't taste the difference, at all, and turkey is healthier for you than red meat, although lean ground beef isn't horrible for you at all.
