People use way too much sugar in cooking too. Just the other day I was at my boyfriends' parents' house and his father made some salsa. He put sugar AND agave nectar in it. Why? To "cut the heat" from the chilis in the salsa. There are other ways to do that...such as add more tomatoes and onions. Or use fewer chilis next time.
