I made a big salad for DH and I and I decided I'd have some for lunch and he can have some with dinner.
1 bag Dole Italian blend
1 bag dole spring mix
1 can small black olives drained
1 can chick peas drained and rinsed
2 tbsp dried dill
1 onion chopped (I use sweet onions)
2 cups shredded cheddar
1 bag croutons
Kens light red wine vinegar and olive oil, I use 2/3 of the bottle
Toss everything together. I use a big plastic salad tub with a lid and believe it or not the salad tastes crispy for 2 days but the croutons get soggy so you have to add fresh ones. This salad lasts us 3 days. I like when the salad gets slightly wilted from the dressing.
We had a luncheon at work today with plenty of food: Several types of salad, meatballs, roast beef, pulled pork, veggies, fruit with heavenly dip, chips, a great con queso dip, mac and cheese, etc. I had lots of fruit and salad, one meatball, and some mac and cheese.
