I made beef fajitas from (round or another cut of beef) not skirt steak. Seasoned with fajita spice..pan fried and made pico-da-gallo and guacamole.. Served on flour tortillas!

I think we're having a tub of rice with a PF Chang's frozen stir fry. Tomorrow I'll need to put forth a bit more effort, like maybe throw a pot roast into the crockpot LOL.
