Oops! I just looked up that recipe for Eggplant Parmigiana, and I overlooked that, peeling the eggplant! Not that it mattered, it was still yummy!
That sounds so easy, and be creative with the toppings, perhaps a little splash of sour cream as well.
So, so glad I finally braved it and cooked some eggplant at 61. Looking forward to more years of cooking with this wonderful vegetable.
Chicken Teriyaki, Stir Fried vegetables and Noodles for us this evening. I need to go and marinade my chicken soon. Chocolate Tart and fresh raspberries for dessert ( the tart was reduced in price at our local supermarket and it is a really good one with dark Belgian chocolate !! so a big treat as we rarely have dessert).
