Two new recipes from my Southern Traditional Cookbook: Texas Rice and Southwestern Casserole. Both very good!

I always cook 2-3 dishes when I'm trying new recipes, just in case, one turns out to be a skunk.

Last week 2 skunks out of 3. But the third overwhelmed the other two, thank God! If all three had been skunks, I would have quit cooking for awhile!

I have pork in the crockpot already, so tonight we'll have pulled pork on buns, corn on the cob (from frozen), and a tossed salad.

I should have a lot of pork left over, so I'll put some on buns, wrap them well and freeze them for individual, nuke-able sandwiches. I think I like this part best! LOL


Edit: Hmmm. Maybe I'll make some cole slaw to have with it instead of salad...

"Chinese" roast pork tenderloin, broccoli, rice -- or roast pork tenderloin, mashed potatoes & gravy, and broccoli. Whichever sounds better at 5:30.
