I think we are doing beef kabobs and I will fix mashed cauliflower instead of potatoes or combine them. We have a little rice left over from last night so I will heat it as well.
Yesterday I made something called Quick Chicken Stew, a recipe I picked up from a 1996 issue of Canadian Living.
It's an easy recipe to throw together so here it is:
1 pound skinless, boneless chicken breasts cut into 1 inch cubes
3/4 tsp salt (or to taste)
1/2 tsp each dried thyme and pepper (or to taste)
1 tbsp vegetable oil
4 cups frozen mixed chopped vegetables
1 can (385mL) evaporated skim milk
1 tbsp cornstarch
1 1/2 tsp Dijon mustard
1 package refrigerated buttermilk biscuit dough
Sprinkle chicken with salt, thyme and pepper and brown in oil over medium-high heat. Add vegetables, cook for 10 minutes or until liquid has evaporated, stirring often.
Whisk together evaporated milk, cornstarch and mustard. Pour into pan and bring to boil over medium-high heat, stirring. Reduce heat, stirring often for about 10 minutes or until sauce has thickened and chicken is no longer pink inside.
Meanwhile bake biscuits according to package directions. Cut in half crosswise: place two bottom halves on each plate. Spoon stew over biscuits and top the remaining halves.
If you want to make the effort, you can adapt it to fresh vegetables, and homemade biscuits but then I would take the 'quick' out of the name of the recipe. I add more thyme, pepper and Dijon mustard than the recipe indicates. Do not substitute another form of mustard for the Dijon, and don't use a grainy mustard. I did that once and it just didn't work.
Supper today is lamb chops with mint sauce, and possibly french fries if the clouds that weren't in the forecast don't go away, and fresh peas. If it heats up again, all bets are off.
I only watch TV basically 2 nights a week--tonight and tomorrow night so I always make dinner super easy and easy clean up on Tues and Wed.. But I think I see Talapia on the counter thawing so I'm guessing my DH decided he's going to make that for dinner tonight. Not sure of the sides but I will be making those I am sure!
