Many people don't know that one of the few excellent uses of rendered beef fat - tallow - is to make french fries. In Belgium the top notch shoestring fries are often considered to be best made with horse fat, iirc.

Yeah, I second the skip the saffron oil!
I used to do my home frying in peanut oil. Now that I own a concession trailer, I'm not willing to take the chance of geting the oils mixed up.
I got rid of the peanut oil, and use Chef's Choice clear frying oil. In the winter it goes for about $12 for 35 pounds. During the fair season the price goes up to around $25. That's at Sam's Club.
