We're having a large BBQ/party this weekend and I was going to deep fry some fries & rings. What kind of oil do you think tastes best?

I tested it out yesterday with vegetable (soy) oil and although the taste wasn't bad, I think it can be better.

Any suggestions?

If u want them to be super decadent use duck fat. Peanut oil is great too.

Anything but canola oil. I have noticed that potato chips, etc which have been fried in it taste awful.
I guess I'd vote for lard.

Bingo!
Peanut oil has a higher smoke point than other oils and lard, so it fries better.

Of course you want them to come out perfect for this weekend, so this is my suggestion:

Come to my house. Make your fries and onion rings in a variety of different oils. Try all of them!

Then -- and here's the important part -- I'll taste-test each batch and tell you which one came out the best.

Great idea, right?

Peanut oil is tasty. However, since it's a party, there might be a guest that has an allergy to peanuts. If you know everyone well enough.....go with peanut oil

Yeah, I second the skip the saffron oil!

Many people don't know that one of the few excellent uses of rendered beef fat - tallow - is to make french fries. In Belgium the top notch shoestring fries are often considered to be best made with horse fat, iirc.

I used to do my home frying in peanut oil. Now that I own a concession trailer, I'm not willing to take the chance of geting the oils mixed up.

I got rid of the peanut oil, and use Chef's Choice clear frying oil. In the winter it goes for about $12 for 35 pounds. During the fair season the price goes up to around $25. That's at Sam's Club.
