Thanks to everyone about the ideas on the instant mashed taters! What I ended up doing is to the Betty Crocker homestyle red skin instant potatoes - it calls for 2 cups boiling water - I substituted that for 1 cup canned milk and 1 cup water and some butter - boiled it, took it off the heat and stirred in the potato flakes. Added a little salt and pepper. OK, I was totally surprised by how good they were, and how close they seemed to the real thing. Gave DH a bite, and asked if he liked them and he loved them (before I told him they were instant.) This is from a man who totally refuses to eat instant taters. Well now, guess who is going to start buying these all the time!!!! Yay!!!!! Happy Dance!
Chicken Latino tonight. Basically you marinate chicken cutlets in lime juice, taco seasoning,olive oil. Saute it until cooked through. remove chicken from pan and add the add peas,1 bay leaf, onions, small red potatoes cut into small chunks. cook those until potatoes are soft and slightly browned. add chicken back into pan and cook another 2-3 minutes and serve. I am also making spaghetti squash.
Last night changed to improvised enchilada pie baked in my deep cast iron skillet. I didn't have any enchilada sauce or much cheese, but I had a craving!
I layered corn tortillas (lightly crisped in the skillet ahead of time in a little oil), with a can of Rosarita's refried beans mixed with about 1 cup salsa followed by a layer of taco meat. More tortillas, beans, meat, and about 3-4 T ground romano cheese on top. (I didn't have any Mexican cheese, so sue me )
Served in wedges with a little shredded iceberg lettuce and salsa spooned over.
Tonight's menu is meatball sandwiches and a salad.
