Heeeey!! That's what I'm doing! It smells heavenly now, too, with hours to go. I had gotten a pork butt for $1/lb, so part's in the crockpot, part's in the freezer, and the rest is sitting with herbs and spices in the fridge, waiting for me to grind it into sausage.

I've got some leftover homemade pesto to use up, along with some roma tomatoes that are starting to get soft. I'm going to fry up some catfish filets, put my favorite spices + tapatio sauce on them, fry those suckers up and then spread some pesto on and top with tomato slices. Put in the oven to bake for a few min. I'll make a side green salad. DD will have leftover skabetti and meatballs (haven't gotten her on the fish bandwagon YET)
