More on Beans: The baking soda changes the structure of the bean and makes them cook up mushy. Changing the water they soak in once and then again drain them and boil them in fresh water, and then drain that water off and start with fresh hot water when you bake them....that helps.
(Do you guys use a bean pot or a covered casserole dish?) Just curious--has nothing to do with gas issues.
When I was a vegetarian and ate lots of beans and legumes.....I found that my body adjusted and digested them much more efficiently. Disproving the school boy rhyme: "Beans, Beans the musical fruit the more you eat the more you toot" and forget about what the rhyme says about being "...good for your heart, the more you eat..."
I've read that adding a pinch of dried, ground ginger to cooking beans also helps elimnate gas issues.
This is why they invented "Beno" Seriously though, I was told years ago by a chili maker to toss in a bit of baking soda to degas the beans and it's worked for me for years.
I tried the baked chimmy yesterday and it was a hit! Thanks mucho for that recipe...

My grandmother used to tell me to take a pin and prick each bean w/it and that would work. I still don't know if it does - because I was smart enough to realize she was yanking my chain!
DH and I cut up the whole rib which we had bought at Costco into steaks and roasts and then did the suck 'em and seal 'em thing, stuck them in the fridge. Except for two beautiful hunks that are going to be grilled for our dinner tonight, along with some lovely marinated grilled veggies. mmmmmmmm Is it supper time yet??
Good morning all, I am going to make a pot of cream of potato, leek soup for hubby's lunch today since it is only in the high 60's today. Something with scallops tonight. I will let you all know what when I decide. Time to clean the leeks.
Does anyone have a recipe for borscht without beef bones? I want to make a pot but I am too lazy to go to the store to get the bones. I have every bone imaginable in the freezer but beef.
2 tablespoons butter
1-1/2 cups chopped onion
1-1/2 cups thinly sliced potato
1 cup thinly sliced beets
1 large sliced carrot
1 stalk chopped celery
3 cups chopped cabbage
1 scant teaspoon caraway seeds
(optional: 1 tablespoon raisins)
4 cups stock or water
2 teaspoons salt
Black pepper
1/4 teaspoon dill weed
1 tablespoon plus 1 teaspoon cider vinegar
1 tablespoon plus 1 teaspoon honey
1 cup tomato puree
Place potatoes, beets and water in a saucepan and cook until everything is tender (save the water). Begin cooking the onions in the butter in a large kettle. Add caraway seeds and salt. Cook until onion is translucent, then add celery, carrots and cabbage. Add water from beets and potatoes and cook, covered until all the vegetables are tender. Add potatoes, beets and remaining ingredients. Cover and simmer slowly for at least 30 minutes.

Hello everyone. My wife is a teacher and has activities all week next week in the evening so we are taking tomorrow and spending it in the kitchen - together - cooking up a week's worth of dishes to make dinners easier during the week. I'm getting my creative juices working and will be spending time reading through this thread for some ideas.
I think tonight will be saucy steak and potatoes. I'll have to remember to grab a couple of steaks out.
