After all the cooking I did for Easter, I made no gravy. Served lemon slices
with plain ole pan fried schnitzel.
Tonite we are going to do chicken cordon blu with wild rice and salad
( using some of the leftover Easter ham)

Well a big HIP-HIP-HORRAY! A week and no smoking, that is wonderful! Way to go! Wish I could pull that off. The drive across country is beautiful. I just did it a year ago from CA to NC. It is a little wearing but we took our time. I had 7 cats in carriers and a parrot in a carrier on the front seat! We had to rent an SUV just for me to bring the animals (remember I use to do animal rescue). Everyone did just fine. It's a long but beautiful drive. I loved it! The parrot loved it! And the cats, well, they wern't to excited about it but they did ok too!! The cat carriers were actually the largest dog carriers I could buy so they took up the entire SUV with no extra room at all. At least with a dog you can stop at the rest stops and let them out for a walk--with cats I had to stop at rest stops, keep all the doors shut and clean litter boxes--yuk!! My amazon parrot thought she was flying and talked the whole way. Hubbie was in a huge Penske truck leading the way!! What an adventure!! It took us 5 days to get here!!

Morning all....hubby is working out of town so we are having pot roast in the crock pot.

Congrats daytripper on the week smoke free. My hubby and myself have also made it a week without smoking too. Woo HOO.

Tonight we are making some tuna cakes and we'll probably have them with mac and cheese or something..... nothing too inspiring!!

Highland saw something like that in Kraft magazine-they looked good. Enjoy.

Yeah, today is shopping today here too. I'm thinking bean and cheese burritos for dinner tonight. Just something simple cause we'll probably end up spending a good share of the day in town. By the time we get home I'm usually bushed and sure don't feel like preparing a big meal.

Since everything is packed, we're going to have dinner at the "No Name Pub" tonight!! Last time I had shrimp pizza w/ white sauce.....it wasn't all that great - so I'm scanning the menu online to decide what I want to try tonight!! Hmmmmmmmmmmm - decisions, decisions!!!
