Hello!

Tonight is either burgers and tater tots or leftover chili from the freezer with corn fritters.

I made 3 ice cube trays full of pesto as well.....so I am sure we will be eating lots of pesto inspired recipes in the coming weeks.....

MWBookworm, you deserve a bubble bath and a long nap after a morning like yours. I've done things like that. Once I made this really nice cake and forgot to add bakig soda. It was for a pot luck, so I had no choice but start all over again.

Hubby is itchin' for pizza and I found this recipe so we are havin' this for dinner... looks good to me...

Deep-Dish Pizza Casserole

Source: Cooking Light
1 pound ground round
1 (15 ounce) can chunky Italian-style tomato sauce
Cooking spray
1 (10 ounce) can refrigerated pizza crust dough
6 (1 ounce) slices part-skim mozzarella cheese, divided
Cook meat in a medium nonstick skillet over medium-high heat until browned, stirring until it crumbles. Drain, if necessary, and return to skillet. Add tomato sauce, and cook until heated.
While meat cooks, coat a 13 x 9 x 2-inch baking dish with cooking spray.
Unroll pizza crust dough, and press into bottom and halfway up sides of baking dish. Line bottom of pizza crust with 3 slices mozzarella cheese. Top with meat mixture. Bake, uncovered at 425 degrees F for 12 minutes.
Top with remaining 3 cheese slices, and bake 5 additional minutes or until crust is browned and cheese melts. Cool 5 minutes before serving.
Servings: 6 - 6 WW points per serving

Tonight I'm making creamy mushroom baked pork chops to have over Jasmine rice with a side of carrots and stewed apples. I am so mad at myself--I forgot my hair appointment this Am...grrrr. Now I have to wait 2 more weeks and meantime look like I should be out trick or treating! I never miss that...another senior moment I guess!

Morning all, tonight for dinner potato soup with salad and biscuits on the side. It was chilly this morning so soup again. The kids and hubby are going to be tired of soup if I keep this up.

It twas going to be chicken poppyseed casserole but I just remembered I don't have anymore poppyseeds, so I have to make it without it. Anyway, rice and little trees(broccoli) on the side. And strawberry puffs for dessert.

I put some rubs on chicken leg quarters, so I will bake that in the oven. Some garlic mashed potatoes and roasted zucchini and eggplant with onions and olive oil on the side.
