Jimj I only do it for presentation and they are easier to eat.
I marinate them in soy sauce orange juice garlic powder brown sugar and ginger. Gross combination but they taste good. I have never seen anything get eaten so fast and 20 lbs will still not be enough.

That gives me an idea I think I've got a big pack of wings in the freezer so maybe that'll be dinner... I bought a few bottles of Quaker Steak and Lube wing sauce online (since the closest one is about 2000 miles away) and we looooove it!

Sometimes we make burritos out of our baked chicken. Just pull it off the bone, wrap it in a tortilla, some nice fresh salsa, and you're good to go. I like a chicken burrito that tastes like chicken. You could also slow cook some chicken in the crock pot and shred it.
Of course you can put other stuff in there like avocado and cheese if you want.

Cyn, I have never made it but I would think that you would want to precook your chicken and shred it, then add it to whatever recipe you find for your burrito.

Just packing up more stuff this morning and popping in to see what's up with everyone. Dinner last night was our local pizza joint with friends. None of us had pizza though -- I had pesto penne with sun-dried tomatoes and pine nuts, BF had a combo calzone, guy friend had stuff shells, and girl friend had chicken parm.
Tonight we have some friends staying over that are going to be helping us move the big stuff bright and early -- we have to get our truck up in Boulder though because that is where our storage unit is. Anyway..........dinner will probably be out again, and we are ordering pizza for everyone tomorrow.
That was my thought...I'll boil up the chicken with some spices in the water and then shred it and just put it in the tortillas with a bit of refried beans on the side. I'll probably put some cheese, onions, lettuce and sour cream in the burrito! Thanks for all the ideas!
