I teaching Italian cooking classes and I tell the people, "this is how I do it, now play around with the recipe and make it your own".

VP-Kelsie's right - we're not born with the innate knowledge of cooking. It's trial and error. All chefs-even Julia-made mistakes.

I gew up with a mother who was a brutal cook-everything was awful-I learned out of watching friends' Mom's and started cooking at 13-boy was my Dad happy! My M-I-L was and oldest S-I-L is fantastic cooks.

Thing is don't try so hard!!! And don't be so hard on yourself. Relax in the kitchen.

LOLLL. don't worry. I'm not that hard on myself. I just don't cook.

I don't mind ONCE IN A WHILE trying to make something and it's great that I found this thread with all these recipes and patient cooks.

I've been lucky that I've always had somebody else that can do the cooking. If they want to eat. I'm fine with take-out and frozen stuff.

Unfortunately, it's catching up with me - weight wise and cholesterol so I do really want to make more things myself.

I had an ex boyfriend who told me that he and his sister always made fun of their mom behind her back for being such a terrible cook. When they grew up, she admitted to her son that she purposely made unappetizing food so she could control her weight!

Mine still is a bad cook and if any of us go there for dinner we either eat before or have something home for after.

Tonight we are having fresh Turkey sauted w/garlic and onions. Going to make a nice white sauce gravy and serve over linguine. With morel mushrooms that were picked today dusted with flour and fried crispy in butter..
I am in heaven.

I envy you the morels! Enjoy!

I thnk I need to let some time go before having turkey. We have a group of wild turkeys visiting our back yard every morning and for about a week the male has been in full testosterone toxicity. I had never seen the full courtship ritual; of tail spread, wings stiffly held to the side, feathers all fluffed up and foot stamping and gobbling and strutting! It is a remarkable display.....but the hens seem less than impressed. LOL They just continue eating.
