It was leftover "gravy" (frozen) over linguine-so good.
Seem to be having a reaction to the Cortisone gel pack that my physical therapist used this morning. Within an hour I was having trouble walking because of the pain, and now it's starting to feel like it's swollen, although it doesn't look like it, so after work (hour and a half) I get to have DH take me to ER.

Tonight I took some cube steaks, browned em, simmered them in some leftover spaghetti sauce, then melted some mozzaella over. It was every bit as good as veal parm, but cheaper. Also pasta salad with a bunch of veggies tossed in.

No cooking tonight. Interviewing another Realtor at 10:30. Will go to our local "Cheers" tonight.

Tonight is chili dogs with french fries. Finally got unpacked now to do all the laundry---amazing how many clothes a person can dirty in just 5-6 days! I picked up some dried black beans yesterday as hubbie said he would love me to make some black bean soup. We've had it when we have eaten out and from cans but really want to try my luck at making my own. Any good suggestions here on how to do that???

Morning Cyn-I make a black bean chili that could be thinned to soup but I use canned beans.

I saute a large onion chopped, peppers (like to use red/yellow/orange), garlic in olive oil. Add chicken stock or broth, cumin, chili powder, dash cayenne, red pepper flakes, drained and rinsed beans. Try not to salt beans til cooked thru as they get tough.

Top with sour cream, chopped scallions.

I have a recipe that my family really likes although I use canned black beans.

2 cans black beans rinsed
2 ribbs celery chopped
1 med onion chopped
2 tblspns jalapeno chopped
2 cloves garlic chopped
1 can diced tomatoes
1 lb andoule (Sp) sausage sliced
1 tspn thyme
1/4 tspn celery salt
pepper to taste
4 cups water
4 chicken bullion cubes
a dash of lemon juice

simmer for about 20 min. serve with crusty bread. This is the best black bean soup I've ever had!!!!

That sounds soooo good. I might try that this weekend. Tonight hubby is still out of town so tonight it is "the other white meat" night. I have some pork chops,not sure what I am doing with them yet.

Oh CYN! Homemade black beans are so good. Not to deter you but...... not everybody can make them come out right. I definitely can't and, as they say, it's in my blood.

My boyfriend makes them pretty good but not as good as my grandmother used to. He uses a pressure cooker.

Let me try to find you a cuban recipe and I'll post.
