Morning all, made a great casserole last night that my kids loved. Oldest son (aka picky eater, pain in my behind, won't try nothing new) inhaled it and asked for more. So here it is straight from the Betty Crocker Casserole cookbook, published 1983

Chinese Pork and Rice

2/3 cup rice (longgrain)
1/2 cup chopped onion
2 T veg. oil
2 cups cooked cut up pork (i used 2 pork chops and 1 pork steak)
1 1/2 cups boiling water
2 T soy sauce
1 teaspoon instant chicken or beef bouillon (I used chicken)
2 med. stalks celery diced diagonally
1 medium green pepper chopped (about a cup)

Heat oil in pan, cook onion and rice til rice is golden brown. Stir in pork, water, soy sauce and bouillon, peppers and celery.

Pour into casserole pan. Cover and cook at 375 degrees for about 35 min. or until liquid is absorbed into rice.

Mine was actually done around 25- 30 min. So I would start checking at that point. We served it with chow mein noodles on top. It was pretty tasty. I think next time I make it I will add a little red pepper for zip but other wise it was a great way to use up leftovers and the kids liked it.


Now for dinner tonight, no idea. Maybe pasta, maybe chicken looking for some inspiration.

I am taking full advantage of the nicer weather here in wisconsin and I am grilling some pork chops, potatoes and probly having a salad and fruit. My DH likes to keep things simple which sucks for me unless I feel like getting the food processor out! My kids though are like little garbage cans.

Your welcome. I was a little leery at first because a lot of the photos in this cookbook for a lot of the dishes looked downright disgusting. (This one didnt have a photo) So I was pleasantly surprised at how tasty it was.

So last night we ended up getting cheeseburgers at a pub and then went to the Rockies game....they won, yeah!

Tonight we have a friend coming down from Montana to visit with her baby and some friends are coming over for dinner too. I am making a layered dip for an appetizer, and then we are just going to get some pizza dough and a bunch of toppings to make our own pizzas. Probably make an italian salad as well......I am so glad tomorrow is Friday!!

I just had some fried noodles with some leftover sausage, cheese and cucumber.

DH will have fried sausage, sauerkraut and potatoes.

I have stir fried sallops, shrimp, rice and Asian vegetables left over from last night. I will saute some boneless chickens strips and add to that for a very simple dinner tonight.
