Air conditioner repair man just left...now that it's cooling off in the house, I think we'll have shredded roast beef tacos and burritos with, of course, pinto beans and spanish rice, along with the ever present glass of unsweetened iced tea!

Storage is not a problem. Maybe I had better revisit this. Storage in the house is not a problem. Storage on me is the problem. With this kind of stuff I need a designated server because I don't know when to day when.

For dinner wife agreed to a hot dog. I bought some BOGO deals made with Smoke White Turkey and they are bad. Now I didn't say great as a steak but still edible when the need arises.

I'm here looking for ideas. DH had a hard day and I told him to relax and I'd figure out what we were eating tonight. Since no kids at home (youngest is a freshman in college this year), we've been pretty much playing it by ear every night. Got to start planning some meals because every night it's the same "What are you hungry for?" "Oh, I don't know - what sounds good to you?"

If you have any type of chicken, and some rice, how about that? Cook/boil chicken shred meat. Cook rice add butter. And there you have it! Any green veggie will go, too! (P.S. our dinner tonight)

You sound very much like me---and that is exactly why I started this thread. Stay tuned and you will find yourself with new ideas daily for dinners. Many are simple and others are elegant but all are great! I am just an average cook---I cook out of necessity. This thread has brought out more joy in cooking for me and also some great friends here!
