I'm doing field work this week and my lodging is a one room cabin with nothing to cook on. I just drove 40 miles into town for terrible Chinese food. The steamed white rice was the most flavorful part of the meal. I bought a pot and a hot plate so I can cook tomorrow.
I'm thinkin chicken thigh pieces baked in tortillas with salsa verde mixed w/sour cream and some brown rice. Wish I had some chard to throw in there. Time to raid the fridge...
Today I am going to make in the slow cooker from ''Moong daal''..green lentils a thick,spicy and creamy lentil soup with homemade fresh chapatis,plain yogurt,a platter with raw sliced onions,garlic,tomatoes and cucumber and lassi. For dessert sliced Bartlett pears and red grapes
Started a wonderful beef stew in the crock pot this morning at 8:30 after I got the girls off to school. I will have hushpuppies and jello fruit cocktail salad for the rest of the meal.
BTW I got my crock pot for a wedding gift 38 years ago and I've used it at least weekly all these years. Basically it is a teflon lined pot on a hot plate but it works for me. My daughter on the other had has been through at least 2 crock pots in 4 years.
Brown sugar meatloaf, mashed potatoes with gravy, and green beans.
