Oven baked chicken legs for hubby, I also made couscous salad. Not sure if I am eating meat for dinner.

I've been given a huge quantity of yellow and green (zucchini) summer squash, and I needed to get creative. So I decided to make a summer squash bake.

Sliced the squash thinly using a mandolin and sauteed with sliced mixed mushrooms and green onions. Seasoned with tarragon, nutmeg and sage

Made a light mushroom gravy. I added soy crumbles, (Beyond Meat) a splash of sherry and freshly ground black pepper.

Topped with whole grain organic breadcrumbs and shredded Jarlsberg cheese. Served with a spinach and tomato salad and grilled sugar and spice corn.

If you have too much Summer squash, this tasted great and everyone liked it.

You can skip the Beyond Meat. If you wish to use ground meat, drain it well.

Peach pie for desert.

I believe we are going to finish up the leftover salad ingredients and I grill a couple hamburgers add applesauce and cottage cheese and call it supper.

I forgot about the fresh green beans from our neighbors garden. I will get those snapped and steamed for supper as well.
There might be a wee bit of fresh banana bread for dessert if I feel like baking when I get up from my nap.
