Since it's Spring Break and house full of kids, they have been picking dinners. Tonight they picked soy/lime glazed chicken over kimchi fried rice.

I think I might pick up a rotisserie chicken from the grocery store. I'm not feeling much like cooking tonight.

I just finished cooking up a family pack of chicken breasts on my George Foreman to have on hand in the freezer, so I'll have one of those and some steamed vegetables. Probably green beans.

Feel bad for not posting recently but it is what is. Work and life makes me either here or not. Anyway...

Had a great Easter dinner with many leftovers like a spiral ham and the Italian dishes like stuffed shells, manicotti with gravy and pork (cooked in the gravy). Gonna clean out the fridge tonight and consolidate.

Tonight it's a simple rotisserie chicken from the supermarket with a side of beans and steamed asparagus on the crunchy side.

Hope everyone is enjoying their dinner and happy eats all! Have some catching up to do.

Vegetable Tempeh Coconut Curry with sweet potatoes, cauliflower and green beans.

Jasmine rice.

Fruit salad with pineapple, pink grapefruit, bananas, and grapes.

Tossed greens with fresh poached asparagus, sunflower seeds, surimi and buttermilk ranch.

For desert I have a pair of hidden dark chocolate, dried raspberry bars.
