My husband wanted stuffed green peppers, and since I'm too busy today to make them, he picked up a frozen Stouffer's package - he really likes those so he's not that upset.

I'm having a wilted lettuce salad - red leaf lettuce with a warm bacon, onion, vinegar and sugar dressing.

Grilled Cheese Sandwiches and...


Quick 'N Easy Tomato Soup

3 tablespoons butter
1/2 cup diced yellow onion
2 (14-1/2 oz.) cans Del Monte Diced Tomatoes with Basil, Garlic & Oregano
1 (10.75 oz.) can condensed tomato soup
Croutons, to garnish soup (I used cheese garlic flavored croutons)

Melt butter in a large saucepan over medium-low heat, then sauté the onion in butter for about 3 minutes & 30 seconds.

Reduce heat to low, then add both cans of diced tomatoes, and the can of tomato soup; stir, and heat through.

Ladle soup in bowls or mugs.

Top soup with croutons if desired.

Yields: 3 - 4 servings

Butternut squash soup made with carrot, onion, celery, granny smith apples, chicken stock and cream cheese. i roasted the squash in the oven with EVOO for an hour and when the kids came home from school they exclaimed "It smells SO GOOD in here."

also made my famous cold salad of broccoli, cauliflower, onion, shredded cheddar, craisins and dressing

very labor intensive with lots of chopping, sauteeing, etc but it should be good.

Leftover Kung Pao and 2 moo shu meat balls should feed my hubby. Missy's wilted bacon salad is sounding pretty good to me. We'll see, it's early.
