I'm making something from my childhood. It's one of my favorites. In frying pan crumble bacon and cut up onion into small bite size pieces. In sauce pan cut up 3 large cans whole tomatoes and juice from tomatoes. Add bacon and onion. Cook 1 lb elbow macaroni and drain. Add macaroni to bacon/tomato mixture and top with 4C pecorino and romano cheese. Really tasty.
Pizza Bread, I'm thinking. I bought some bakery loaves yesterday, so I'll cut those up, cover them with pizza sauce, add some of the pepperoni I purchased for when I made my sub that's leftover, add mozzarella, then bake 'em up. Or I could not use the pepperoni, and just use mozzarella and cheddar cheese - I LOVE cheese pizza bread like that, too.
Hmmmm.... Decisions, decisions...
But I have windmill cookies for dessert, so YAY!!!
DH is having the rest of the leftovers from the past two nights. I am having clam chowder and a huge salad. Dessert is red velvet cake with buttercream icing.
Some kind of beef soup/chili that hubby made over the weekend. I haven't even seen it yet. And I plan to throw together a cabbage salad with nuts and craisins.
Chicken thighs baked in the oven. Jasmine rice with saute'd onions, garlic, cumin, chili powder and pink beans and olive oilmixed in. Steamed green beans.
Attempting for the LAST time the oven baked chicken and rice casserole. I added more water than the recipe calls for this time so I am hoping the third try is the charm. I have failed miserably with the first two attempts.
You wouldn't think this dish would be hard to master! And yes, I stirred the rice with the liquid till it was in a single layer. And yes it's covered/crimped tightly with foil plus a layer of parchment paper under the foil for good measure.
Linguini with clams. Garlic bread. And a big salad.
Chocolate chip cookies.
