I made hamburger steaks with brown gravy for DH and the dogs. The rest was leftovers. I sautéed the collard greens with onions in pancetta and heated up the rice, lima beans, and baked beans.

Trying out something new: baked spaghetti made with shiritaki noodles instead of pasta. Trying to cut down on extra calories, wheat, and up the fiber. Ran it through a recipe tracker and comes out to 385 calories per serving as opposed to 640 made with regular noodles. Hope it tastes decent!

A simple romaine salad tonight, though I might add a microwave quesadilla for a snack. Feeling a bit peckish.

Leftover spaghetti and meatballs. Spaghetti is one of those foods that get better with age.

Spaghetti with Italian American style homemade red sauce. I just finished roasting some Italian sausage that I will fold in the sauce soon.

We had a leftover - home made french onion soup from last night. I warmed it up, topped with some toasted french bread and shredded Swiss cheese and put it in hot oven for a few min to melt. Plus I cooked some pumpkin raviolis from Trader Joe's. And then some Raspberry Tart from Trader Joe's.
