I'm moving in 2 weeks, so I'll be cooking and eating whatever is in the fridge/freezer till then. Tonight I had WW loaded potato soup with salad. Tomorrow I'm cooking for DS too, he's asked for homemade gravy with Italian sausage and turkey meatballs, which I will cook in the slow cooker and have with spaghetti, salad and garlic bread.

Today, I made thin crust pizza with onions, jalapeños, bell peppers, and olives for Superbowl dinner. I also modified some of the slices for friends who dont eat cheese due to their level of weight consciousness. Here are pics.





There is some left over. If anyone wants to take a bite, please be my guest and feel free to do so.

Made the best pot of chili I've made in a long while. Started with a pot roast, braised it in my chili mix, then shredded it. So much better than using ground beef.

Tonight stuffed grape leaves and the shrimp cocktail I didn't bother to make last night.
I make a Lebanese version of grape leaves.
Rinse grape leaves, trim off the stem, place a layer in the bottom of a deep pot. Then place a layer of sliced lemons. Make the filling- about a cup of rice, rinsed into a bowl. Sprinkle with about a teaspoon of salt and pepper, cinnamon and allspice. Then add a pound of ground lamb and two tablespoons of melted butter. Mix well. Put about a tablespoon in a cigar shape onto the base of a grape leave, roll up to top point in leaf while folding in the sides. Place tightly wrapped leaf seem side down on top of the lemon layer. Repeat until all the filling is gone. Place a layer of sliced lemons on top and then a layer of flat grape leaves. Fill pot with water, then place inverted plate over everything. Place a heavy weight on plate. Bring to boil, lower heat and then simmer for 45 minutes. Gently remove stuffed grape leaves and put on a platter.

It's just the kids and me tonight, so I think I'll make mini tortilla pizzas and raw, sliced veggies.

Tonight, we are having chicken breasts roasted with a tangy chili sweet sauce glaze on the skin. YUMMO!

I also think the menu will include brown rice, and steamed asparagus.

Well had planned on having roasted chicken, but I forgot to take the gal out of the freezer so that is for tomorrow night. Tonight I am grilling a steak on the indoor grill (certainly am not grilling outside) I think I will grill mushrooms and squash with it. I will make a small salad and maybe bake a potato for us to split. Damn I was hoping, after my knee surgery my appitite would not come back and I would keep those 10 lbs I lost off, but it isn't going to happen. I am hungry all the time it seems.
