Growing up, the cheese try was a favorite dessert and in the 90's and probably early part of this century, I was still trying to recreate those family memories. Unfortunately, there were far less mouths at those modern examples.

Hard to say what changed my appetite for all those special cheeses. Occasionally, I'll be shopping, and I might go overboard and buy a huge block of it, using some justification for it. I'll pick up the small bins from time to time and admittedly, it does go fast.

As it is, feta types are my passion now. Use them in salads, stews, and pastas. When I go to the store, I buy about $20-$30 of them in a pass. One of the things is that it is very hard to go overboard in feta use except for that. It's not like one can make a good submarine with it or smother croutons with it melted. Which is another thing.

When I got rid of my microwave, my hunger for "Poor Man's Welsh Rabbit" went away. I no longer "need" to smother croutons in melted cheddar cheese, which is probably a good thing......and am no longer buying block cheeses, which is probably a good thing.

Now, cheap powdered cheeses are another matter...........................

Fita is one type I am still trying to devolop a liking to: I don't dislike it, I just am not a huge lover of it. I am still the blue cheese queen. Like you, anything powdered whould be against the law.. Well maybe not that far but how many people do not really know what they are eating. They think all cheeses are cheese, just like all Mexican sauces spicey and all spagetti sauses are the same.
