Its just about 10PM here on Oahu and I'm making a late dinner. I'm making a sandwich out of leftover roast duck that I bought in Chinatown the other day. Side of supermarket potato salad, and a V8 fruit drink.

oh my, I was planning on having veggie burgers but just am not in the mood, so guess I will make spoiled brat tuna casserole, one of his favorites. Of course a salad has to accompany the casserole. I might change my mind when I go to the grocery store later this morning.

Found some Thai Basil yesterday ay the Asian grocer, so I've pulled out the frozen duck stock (from the last time I cooked a whole roast duck) for a Thai style noodle soup with some chicken for protein, bean sprouts, bok choy, fried shallots (crunchy), snap peas (they were fresher than the snow peas), cilantro, and maybe some ****aki mushrooms. Cucumber sesame salad on the side.

The remains of thst lovely Thai basil will become 3 cup chicken tomorrow. Yummmmmm.

Tonight baked salmon with garlic and Dijon,basmati rice and steamed asparagus with browned butter. A glass of wine with it. For dessert apple pie with vanilla ice cream and a cup of black coffee

Actually, this is her with her brother. It's either going to be Emma or Belle. I like both.

My daughter is working nights and her puppy was neutered yesterday, so I'm sitting and caring for him. Dinner will most likely be Domino's or Pizza Hut.
