Ohhhhhh. Someone else in this thread mentioned zoodles and I thought it was just her being cute with the word noodle. Got it - zucchini spirals that you use instead of noodles.

I'm waiting on some fresh Eggplant. Eggplant parm takes much time but worth it in the end. If i manage three meals this summer that will be cool, and my parm will beat New York's all day long. I skin the eggplant while others don't. Big difference in taste and will hit the farm this weekend and the supermarket to see the the stock.

Lazy night for me. Just making some pepper, egg, onion and mushroom heroes on baguettes.

too hot to grill out so baked some French fries (russet potatoes) and some chicken breast tenders in the oven. Small side salad. At least I'm higher up and we only have 98 out instead of 110 like in phoenix.

Keeping it simple tonight. Grilled cheese sandwiches with crispy onion rings, and some dill pickles.

Thanks for all the well-wishes, everyone. Like I said, I'll update you on hospital food once I'm in there.

Tonight's dinner turned out to be taco salad, and delicious.

Leftover meatloaf, baked sweet potatoes, and green beans. We have Italian ices in the freezer for dessert.
