Good morning everyone

What a difference between yesterday and today. It is really cool outside and I am thinking of something hot to eat for tonight.
So I am planning for tonight chicken leg tandoori,basmati rice with cashews,clove and green cardamon pods,cucumber and red chili raita,buttered homemade naan. Served with sliced red onions,lettuce,tomato slices. To drink lassi or sour lemon water . For dessert more golden honeydew melon or peach slices.

Today is a bridge day so I don't even get home til late afternoon; dinner has to be simple.What is simpler than steamed crab over pasta with a little white sauce and a nice green salad. Spoiled brat will be happy, I will be less stressed and we will both enjoy a glass or two of wine with dinner: Maybe one glass before dinner. Who knows?

Ratatouille. Basically, eggplant, peppers, zukes, roma tomatoes, garlic, onions, and fresh basil sauteed. Picked fresh from my garden.

And eggplant antipasto...diced eggplant, onions, peppers, and mushrooms baked in the oven with a little olive oil, then add a can of tomato paste and water and fresh basil. Bake another 30 minutes, remove and add some sliced olives (recipe calls for green, but I substitute black rinsed to reduce sodium).

This is my go-to dish for any barbecue or summer potluck I'm invited to. Served cold, it's a great dip with crackers. Can be a great salad. Or, warm, it's good over pasta.

Tonight for DH, I'll serve it cold with salad greens along with the ratatouille.

You sound like my DH. He had a heart attack early in the summer, and I'm trying to adjust cooking "acceptable" foods he likes that he will enjoy. A challenge. He sure misses steak and chicken wings!!!!

I think I will do a modified chicken fajita type thing, and refried kidney beans. I know sounds weird, but I bought a case from Costco when I meant to buy black beans, it actually comes out very good.
