After all the fried foods I've been gobbling down lately , I decided it was time for a healthy (healthier!) dinner. I still had a bit of the London broil steak from a couple of days ago so figured I would cut some up and put it in a plain ol' salad ...



Actually it was what Elaine on Seinfeld would have called a "big salad" ... that's a Fiesta vegetable bowl! I didn't have butter lettuce (my favorite) so I used just plain old iceberg (I actually love it too for its crispness), carrots, tomatoes, onions, and a bit of corn. Wish I'd had avocado to add to it but alas, I'm all out! I also like to put a tiny bit of feta cheese on my salads but I'm out of that too.

Had it with a lite Greek vinaigrette dressing on the side and ice water. It was yummy and pretty filling!

leftovers again -- roasted chicken thighs and ginger cole slaw. A slice of cinnamon toast for dessert

sesame chicken leftover from last night. DH had a store bought rotisserie chicken.

Looking great Karen in NH! I always use London broil for steak salad. I love the flavor.

I was going to make oxtails tonight. I got ready to make it and realized I forgot to buy red wine. I had to throw together a meal. I made rotini with a sauce of goat cheese, cherry tomatoes, olive oil, fresh basil and chopped kalamatas.

I went to a tea this afternoon, with fiends who enjoy this sort of thing.

We had an assortment of traditional tea sandwiches, all trimmed of those nasty crusts!

My contributions were watercress, cucumber and butter on white. tomato and cheddar on buttered white, with watercress and herb butter, curried egg salad, mock crab with mayo, lemon, parsley and chives on a study white.

A friend who also does not eat meat, brought a delicious faux ham salad sandwich and brie and apple sandwiches.

There was tea and a potent punch.

Desert was berry trifle, tea cookies and blanc mange.

SO, DH is enjoying a pizza tonight.

I have no idea. Maybe some green beans, potatoes, and corn bread.

keeping it simple with hot dogs on buns & a can if baked beans, some slaw on the side too.

DirtGrinder, I use both asiago and pecorino romano in my lasagna quite frequently. I've made it with pepper jack thrown in too.

Well, magicshark, when you finally get around to making those oxtails, I may have to hunt you down! I love oxtails but they have gotten so expensive, I very seldom buy them.
